Hi Graham,
Are you trying to change the real name or the actual email address for your email account? If you want to change the email address just create a new one and stop logging into the old one. The old account will be automatically canceled after a few months. If you want to change all then you will need to change your Hotmail personal information. Did this information answer your question?
