problems with Gmail contacts.

I have my Google contacts sorted in Last Name order but when I press the "To" Tab within Gmail my contacts are shown in first name order. How do I rectify this?

This might not be a problem anymore. In April 2021 I can start typing by first or last name and the correct contact is auto suggested.
