Are you running the latest version of Chrome? I had the same problem and it was fixed after the latest update.

Try these steps: put your iPad in airplane mode. press and hold the new email icon. a list with the latest drafts is shown. choose your lost draft. select all text and copy. paste the copied text in notepad. put your iPad back online.

Make sure you are running the latest version of Chrome. If that doesn't work, try clearing your web cache using triple dot -> more tools -> clear browsing data

This might not be a problem anymore. In April 2021 I can start typing by first or last name and the correct contact is auto suggested.
