As far as i know metadata cannot be encrypted (please correct me if i'm wrong) because it is needed by the receiving server to understand where it has to put the message in. Also services who are saying they don't have metadata are not completely honest. Metadata is needed to run a descent...

Watch out with Mailchimp when you import a mail database (.csv or something). They have put in an extra security to check which email addresses are going to bounce. The fun part...they don't tell you which one it is. So if you have a few hundred mail addresses upload them in pieces.
